Zucchini Bread/Muffins - Reverend Richard Joyner

Ingredients

  • 1 cup all purpose flour

  • 1 teaspoon cinnamon

  • 1 teaspoon nutmeg

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla

  • 1 stick of butter (1/2 cup)

  • 1 cup sugar

  • 1 egg and 1 yolk

  • 1 1/2 cup grated zucchini

  • Nuts

Instructions

  1. Spray 2 loaf pans or muffin cups with cooking spray. Set aside while your oven preheats to 375°F (190°C).

  2. I use a food processor to grate my zucchini. Then I add all the wet ingredients and blend for one minute.

  3. Add the dry ingredients and mix.

  4. Pour into your pans (or muffin cups) and bake until done, about 20-25 minutes if muffins. Loaves take longer.

I use walnuts, but you may use nuts of your choice.
